A Bellini is a famous Italian and internationally well-known long drink cocktail. It is a sparkling blend of white wine (traditionally Prosecco, Italian sparkling white wine) and white peach purée. The drink started as a seasonal specialty of the Harry's New York Bar in Venice, Italy, in 1948, a favorite haunt of Ernest Hemingway, Sinclair Lewis and Orson Welles. Later, it also became popular at New York bars. Bellini has been used in perfumery recently. It attracted perfumer’s interest by an elegant, crisp fragrance - a charming composition of velvety fruity, peach note and fresh, rich aromas of apple and pear with a hint of citrus and Champaign which fade into the floral bouquet. In other words, Bellini is an uplifting, slightly sweet fragrance with an ultra sophisticated pleasurable complexity.
