Marmalade is a type of fruit preserve made from fruit, fruit juice, peel, water and sugar. Marmalade can be made from various fruits but it is most commonly prepared from lemons, grapefruits, mandarins, sweet oranges, bergamots and other citruses. The fruit is usually sliced or chopped and then shimmered in sugar, fruit juice and water. Marmalade most probably originates from ancient Greek cookbooks. The common name, marmalade, came from the Portuguese marmelada, which referred to a preserve made from quinces.
